Obviously this is harder to trace in a collaborative medium, especially in commercial movies where the genre does half the writing. Maybe genres too can be traced back to particular movies though: It Happened One Night, The Maltese Falcon, Bullitt, Heathers, Pulp Fiction.
Anyway here's some derivations I've noticed that amuse me:
Road to Perdition's (dumb pretty movie) from Miller's Crossing
Being John Malkovich's from The Man With Two Brains
Velvet Goldmine's (hidden behind overexplicit references to Citizen Kane and Tommy) from Eddie and the Cruisers
